Tökéletes tortarecept a sok szőlő felhasználására, de nagyszerűen működik más gyümölcsökkel is, például vékonyra szeletelt őszibarackkal vagy körtével, esetleg áfonyával. Nem kell aggódni, csak kis szeletek lesznek a sütiből.

Szőlős mascarponetorta recept

  • 3 tojás
  • 60 g porcukor
  • 60 g liszt
  • 4 púpos evőkanál mascarpone
  • 4 púpos evőkanál tejföl
  • 1 evőkanál porcukor
  • 2 evőkanál frissen facsart citromlé
  • 1 fürt kékszőlő (vagy egyéb, rendelkezésre álló gyümölcs)

A sütőt 180 fokra előmelegítjük.

A tojásokat szétválasztjuk. A fehérjéből csipet sóval kemény habot verünk, a habverés felénél hozzáadunk 30 g porcukort. A sárgáját fehéredésig keverjük további 30 g porcukorral. A két habot óvatosan összevegyítjük, majd rászitáljuk a lisztet. Finoman összekeverjük, majd egy 18 cm átmérőjű körformában sütjük először 15 percig, majd további 15 percig 160 fokon. A végén tűpróbával ellenőrizzük az állagát, majd rácson hűlni hagyjuk.

A krémhez a mascarpone-t kikeverjük a tejföllel, a porcukorral és a citrom kifacsart levével. Felhasználásig hűtőbe tesszük.

A kékszőlő-szemeket elfelezzük (érdemes kimagozni, ha van hozzá egy kis türelmünk), vagy barack, esetleg körte használata esetén azokat vékonyra szeleteljük.

A kihűlt piskótalapot vízszintesen félbevágjuk. Az alsó lapra kenjük a krém kétharmadát, majd elrendezzük rajta a gyümölcsöt. Ráhelyezzük a felső piskótalapot, amire rákenjük a maradék krémet. Fél órán át hűtőben dermesztjük.

This is a perfect way to make use of all the grapes that are available now, but you may find other fruits, such as apricots or pears work perfectly as well. And there’s no need to worry, the end result will be just small slices of a really delicious cake.

Sponge cake with mascarpone and grapes

  • 3 eggs
  • 60 g powdered sugar
  • 60 g flour
  • 4 heaped spoonful of mascarpone
  • 4 heaped spoonful of sour cream, crème fraiche or Greek yoghurt
  • 1 spoonful of powdered sugar
  • 2 spoonful of freshly squeezed lemon juice
  • 200 g red grapes (or other fruit, eg. apricot, pear or blueberries)

Preheat the oven to 180 C.

Separate the eggs. Beet the egg whites till it forms soft peaks, then add 30 g sugar and beat until the peaks are set. Mix the other 30 g sugar with the egg yolks and mix until fluffy. Add the egg whites to the sugary yolks and mix gently. Sift the flour over the mixture and mix it all together until just combined. Pour the dough into a 18 cm diameter baking tray and bake for 15 minutes. Reduce the heat to 160 C and bake for another 15 minutes. Check the finished sponge cake with a sharp knife, and if ready, let it rest on a tray.

For the filling, mix the mascarpone with the sour cream (or substitute), sugar, and lemon juice. Store in the fridge.

Half and deseed the grapes (or prepare the fruit of your choosing to be appropriate for filling the cake).

When the sponge cooled a bit, cut it horizontally into two disks, and pour 2/3 of the mascarpone cream filling on the bottom half. Arrange the grape or other fruit on top and cover it all with the other half of the sponge cake. Use the rest of the cream for a nice glaze, and keep refrigerated for about 30 minutes to set a bit.
