This is the ultimate party food. I make this pea&feta dip as a side sometimes, but it shines even better when made with a big bowl, for many people at a party, alongside some veggie sticks (or crudités), so that people can indulge whenever they feel like. It is just salty enough that it goes perfectly with wines.
Oh, try it with the other dish I almost always make when having a party: focaccia, of course.

- 2 tablespoon olive oil
- 3 cloves garlic
- 220 gram grean pea (frozen is fine)
- 100 gram feta cheese
- 2 heaped tablespoon sour cream or creme fraiche
- 1 pinch salt
- 1 pinch freshly ground black pepper

Instructions
- Chop the garlic, and add to a skillet with the olive oil. Start heating over low heat
- After about a minute, add the grean peas, salt and pepper. Stir, cover, and allow to cook for about 7-10 minutes.
- When the peas are soft, transfer to a big bowl. Add the crumbled feta and the sour cream or creme fraice, and a glug of olive oil, and use a hand blander to mix it to a soft cream. Add a tablespoon of warm water (or more sour cream) if you want a smoother consistency.
