A héten az az étel került a Marie Claire Magyarország oldalára, ami mellett az ember igazán kikapcsolhat. Egyszerű elkészítés, csodálatosan finom ízek, ráadásul a mennyiségeket könnyen lehet emelni, ha nagyobb társaságot látunk vendégül. A padlizsánt illetően különböző iskolák léteznek, nekem mindenesetre az a tapasztalatom, hogy ha felhasználás előtt nem sózom be a feldarabolt zöldséget és nem várok legalább 15-20 percet (amíg jól látható nedvesség keletkezik a padlizsánszeletek felületén), akkor bizony keserű lesz az étel. Persze ha valaki nem rajong a padlizsánért, készítheti az ételt cukkinivel, vagy esetleg kolbászkarikákkal is.

Farfalle sült padlizsánnal és a leggyorsabb paradicsomszósz (2 főre)

  • 20 dkg farfalle
  • 1 közepes padlizsán
  • 3 gerezd fokhagyma
  • 1 tk szárított chili
  • 1 púpos evőkanál paradicsomsűrítmény
  • kevés friss bazsalikom
  • ½ tk szárított oregano
  • 1 merőkanálnyi a tésztafőzésből maradt vízből
  • frissen őrölt bors
  • olívaolaj
  • napraforgóolaj
  • petrezselyem
  • parmezán vagy mozarella

A padlizsánt 2 cm-es karikákra vágjuk, egy tányérra rendezzük, és a szeletek mindkét oldalát alaposan besózzuk. Kb. 20 perc múlva barnás folyadékcseppek keletkeznek a szeleteken, ekkor folyó víz alatt lemossuk, majd konyhai papírtörlővel szárazra töröljük a padlizsánt.

A tésztát nagy lábasnyi forró, sós vízben főzzük a csomagoláson szereplő ideig, közben gyakran megkeverjük (a főzővízbe nem szükséges olajat tenni, azonban ahogy betesszük a tésztát a vízbe, azonnal el kell kezdeni a kevergetést).

Amíg a tészta fő, elkezdjük a paradicsomszószt: egy kis lábasba tesszük a felaprított fokhagymát, sót, a chilit és 1 ek olívaolajat, majd kis lángon addig hevítjük, amíg a fokhagyma illatozni kezd. Ekkor hozzáadjuk a paradicsomsűrítményt, átkeverjük, majd hozzáöntünk egy merőkanálnyit a tészta főzővizéből. Hozzáadjuk a borsot, a bazsalikomot és az oregánót, majd lefedve 5-10 perc alatt készre főzzük.

A padlizsánt falatnyi kockákra vágjuk, és serpenyőben hevített napraforgóolajon kevés sóval megpirítjuk (érdemes két részletben csinálni, hogy elférjen a padlizsán).

Végül összeállítjuk az ételt: a kifőtt tésztára halmozzuk a paradicsomszószt és a sült padlizsánkockákat, megszórjuk petrezselyemmel, végül tekintélyes mennyiségű frissen reszelt parmezánnal (ha ez nincs kéznél, mozarella is remekül illik hozzá).

The basic no-stress meal of around this household is the tomato sauce with pasta, of course. I cook it baout once a week, sometimes with an extra add-on, and the resulting dinner provides complete relaxation. The flavours are usually not too complex, but really lovely, and you can easily customize the measures depending on how many people you cook for. It’s the perfect hearty meal.

I love aubergines (or eggplants), in pretty much all forms. There is one trick however: you need to get the bitter taste out of the veg, and my experience shows that the best way to do this is to slive an aubergine and sprinkle with a fair amount of salt, then leave it for about 15-20 minutes. When brownish liquid appears on the surface, you need to wash the slices and dry with kitchen towel – frying afterwards will result in amazing taste. No bitterness.

Farfalle with baked aubergine and the fastest tomato sauce (serves 2)

  • 200 grams farfalle
  • 1 medium aubergine
  • 3 cloves of garlic, finely chopped
  • 1 teaspoon dried chilli
  • 1 heaped tablespoon of tomato paste
  • salt
  • a few leaves of fresh basil
  • ½ teaspoon dried oregano
  • 2 dl of the pasta’s cooking water
  • fresh pepper
  • olive oil
  • vegetable oil
  • parsley
  • parmesan cheese or mozarella

Cut the aubergine to 2 cm slices, put on a plate and sprinkle about 1 tablespoon of salt all over, on each sides. Check 20 minutes later, drops of brownish liquid should be seen on the surface. Clean the slices under running water and dry completely with kitchen towel.

Boil a large pot of water, salt liberally, and cook the pasta in it according to packet instructions. (No need to put any oil into the water, but do mix it with a wooden spoon every now and then, and especially when you put the dried pasta into the water. They will not stick at the end.)

As the pasta is cooking, proceed with the tomato sauce: put the chopped garlic, the oil, the chili and 1 tablespoon of olive oil into a small pan, and heat over small falme until you start to smell the garlic. Then add the tomato paste, use a mug to add some of the pasta’s cooking water and also add the basil, the oregano, and some black pepper. Cover, and cook for about 5 to 10 minutes. Taste and add some lemon juice or brown sugar (this depends on the original taste of your tomato paste).

Dice the dried aubergine, and fry in a large pan 2-3 tablespoons of vegetable oil and sprinkle with a bit of salt. It is worth doing it in two batches, so they’ll roast faster.

Finally, assemble the dish: spoon the tomato sauce over the cooked pasta, put the aubergine on top and sprinkle with a lot of freshly grated parmesan cheese or bits of mozarella and some parsley (or, to be more authentic, fresh basil).
