Do you serve a traditional menu at the Christmas table with the same items every year or do you experiment with new dishes to raise the excitement vibe? In Hungary we have some classsics like the traditional fish soup or a lovely dessert called bejgli – none of which I can cook at this point as these are ususally the tasks of mothers and grandmothers of the family.

Anyway, here is a lovely side dish to try with the incredible sea bream recipe or any other main course of your choice. It is quite fast to make, super-delicious and also really beautiful!

Christmas Couscous (for 2 if this is the only side you serve, or 4 if you serve other dise dishes as well)

  • half cup dry couscous
  • ¾ cup boiling water
  • salt
  • olive oil
  • 1 large onion, thinly sliced
  • 1 teaspoon garam masala
  • 2 cloves garlic, chopped
  • freshly ground black pepper
  • 1 handful of walnuts
  • 1 handful of raisings
  • 1 large bunch of fresh mint
  • 2 bunches of parsley, chopped
  • seeds of a quarter of pomegranate
  • juice of half a lemon

Put the couscous into  a medium bowl and pour boiling water over. Add salt and a tablespoon of olive oil, cover and let alone for 15 minutes. When time is up, fluff it all with a fork.

Heat a large skillet over low heat, add 2 tablespoons of olive oil and the sliced onion, and the salt and garam masala. After 10 minutes add the chopped garlic, keep on the stove for 10 more minutes, then transfer into a big mixing bowl.

Use a kitchen towel to clean the skillet, turn the heat up to  middle, and add the walnuts. Toast for a few minutes, then roughly chop and add to the onion.

Put the raisins into a cup and cover with bioling water. Rinse after a few minutes, discard the water and add the raising to the mixing bowl too, along the mint and the parsley.

Add the fluffed couscous to the rest of the prepared ingredients, season with salt and pepper, add 5-6 tablespoons of olive oil and the lemon juice and mix it all thoroughly. Sprinkle some mint leaves and the pomogranate seeds over the salad as a final touch.
